How to Brew
Quick Brew Method
- Add 5-6 grams (2 heaping tablespoons) of mulberry leaves to a pot.
- Add 4 cups of near-boiling water.
- Brew for about 3 minutes.
- Strain and enjoy, whether hot, cold, or over ice.
Senjiru Brew Method (For a deeper infusion)
- Start with a little more than 4 cups of cold water in a pot.
- Add 2 heaping tablespoons of mulberry leaves.
- Bring to a full boil.
- Reduce heat and simmer for 10 minutes.
- Turn off the heat and let it sit for another 10 minutes.
- Strain and serve.
About DNJ
DNJ, or 1-Deoxynojirimycin, is a naturally occurring compound in mulberry leaves. It's a glucosidase inhibitor (an enzyme blocker), which prevents certain enzymes in the intestines from converting carbs from the food you eat into sugars. As a result, sugar absorption into the bloodstream is slowed down, moderating the increase in blood sugar levels after eating.
